The original terraced portion was picked August 30th at 22.3 Brix while the younger (younger only by several years though) section was picked on September 5th at 23.5 Brix.  Acidity was not lacking in either lot with pHs of 3.15 and 3.20 respectively.  To balance that acidity, for the first time ever, we decided to put a portion (the terraced section) through malolactic fermentation.  Worked like a charm!  Fermented and aged in all stainless steel and lightly fined with bentonite clay for protein stability.

Tasting Note:

Medium-light yellow-gold.  A beautiful nose of Crenshaw melon, lime, and a subtle suggestion of white pepper and fresh hay.  Lovely and true to the variety.  On the palate, medium-bodied with flavors of lime, Asian pear, and ginger.  There’s a pleasing piquancy in the long and persistent finish.  Drink this versatile food-friendly white from release through 2025.
